In the white varieties in this area, Albarín has been inclined as the flagship variety of the Denomination of Origin. Since it has a good adaptation to the conditions of the area producing wines with very good acidity and a very particular aromatic profile of this space.
 
Other authorized varieties come to us through history, such as Malvasia or Palomino, since the forties.
